Another quick 15 minute noodle dish you can easily make using common pantry items! I used udon because I love thicc noodles but you can use your favorite noods. This dish is so simple, vegan and also a favorite for the kids, just leave out the chili flakes if you’re making it for the little ones.
Serves: 1 person
Ingredients:
1 pack of frozen udon
2 chopped scallions
1 tbsp minced garlic
1 tbsp chili flakes (adjust to taste)
2 tbsp veggie oil
1/2 tsp brown sugar
2 tbsp soy sauce (adjust to taste)
1 tsp dark soy sauce
julienne cucumbers
Instructions:
1. On medium high heat, heat up 2 tbsp veggie or any neutral cooking oil then add in minced garlic, chili flakes and chopped scallions. Reserve some scallions for garnish.
2. Saute until fragrant, about 30-45 seconds should be enough.
3. Cook frozen udon per package instructions.
4. In a bowl, add udon, brown sugar, soy sauce, dark soy sauce and spicy garlic scallion oil. Mix well.
5. Garnish with some scallions and cucumbers!
