For the Fried Rice:
2 small onions, finely diced
2 small red peppers, deseeded and thinly sliced
1 tbsp sesame oil
2 large garlic cloves, grated
2 tsp ginger purée
120g sugar snap peas, cut into three
500g cooked basmati rice
2 tbsp dark soy sauce
80g frozen peas, defrosted
Salt and freshly ground black pepper
For the Prawns:
2 packs of Whitby Seafoods Lemon & Pepper King Prawns
To Serve:
200ml sweet chilli sauce
Lemon wedges
Instructions:
Prepare the Fried Rice:
Add onions and red peppers to the air fryer basket. Drizzle with sesame oil and toss to combine. Cook at 190°C for 5 minutes, shaking the basket halfway through.
Stir in garlic, ginger purée, and sugar snap peas. Cook for 2 minutes.
Add cooked basmati rice, reduce the temperature to 180°C, and cook for 10-12 minutes, stirring occasionally.
Mix in dark soy sauce and defrosted peas. Cook for an additional 2 minutes. Season with salt and pepper. Cover with foil to keep warm.
Cook the King Prawns:
Clean the air fryer basket and arrange the prawns in a single layer. Cook at 200°C for 10-12 minutes, shaking halfway through. The prawns should be golden and crispy.
Assemble the Dish:
Serve the fried rice in warm bowls, top with the Lemon & Pepper King Prawns, drizzle with sweet chilli sauce, and garnish with lemon wedges.
