Sauce Hollandaise! Ohne die, gibt es auch keinen Spargel. Aber Spargel ist lecker und wer ihn vegan essen will, kann sich mit diesem Rezept eine cremige Hollandaise auf Cashewbasis zubereiten. Perfekt!

Cashew Sauce Hollandaise (400ml)
———————–
100g Cashewkerne
160ml Gemüsebrühe (heiß)
120ml Pflanzenmilch (z.B. Soja)
1/2 Limette (Saft)
1 kleine Knoblauchzehe
1 Esslöffel Hefeflocken
1 Teelöffel Senf
1/3 Teelöffel Kala Namak (oder Salz)
1/3 Teelöffel Kurkuma
1/3 Teelöffel Pfeffer

Cashewkerne zusammen mit heißer Gemüsebrühe in einen Standmixer geben und 10 Minuten quellen lassen. Danach alle weiteren Zutaten hinzufügen und mixen, bis eine glatte Flüssigkeit entstanden ist. In einen kleinen Topf geben und erwärmen. Bei Bedarf noch etwas Brühe hinzufügen, wenn die Sauce zu dick wird.
