A creamy and vegan dessert made with matcha, roasted pistachios & almond cream cheese โ naturally sweet and dairy-free. Perfect for matcha lovers ๐
Crust:
โข 50g almonds
โข 40g oats
โข 25g coconut sugar
โข 30g melted coconut oil
โข 1 tsp maple syrup
โ Grind almonds & oats in a blender, mix with remaining ingredients, press into pan, bake 10 min at 180ยฐC
Filling:
โข 90g cashews (soaked for 30min)
โข 20g pistachios (soaked for 30min)
โข 150g almond cream cheese
โข 60g soy yogurt or skyr
โข 60ml maple syrup
โข 25ml coconut oil
โข 1 tsp vanilla
โข 2 tsp matcha
โ Blend until smooth, pour over crust, chill at least 5h
Topping:
โข 30g salted and chopped pistachios
