Ingredients you’ll need:
β’ Firm Tofu (400g)
β’ Onion (120g)
β’ Long Sweet Pepper (120g)
β’ Garlic (2 cloves)
β’ Vegetable Oil (4-6 tbsp)

β’ Soy Sauce (2 tbsp)
β’ Pul Biber / Chilli Flakes (1 tsp)
β’ Concentrated Vegetable Stock (1 tbsp)
β’ Salt, Black Pepper, Parsley, and Sesame Seeds
Instructions:
1. Prepare the tofu
β’ Cut the firm tofu into slices or cubes, depending on your preference.
β’ Season with salt and black pepper.
2. Shallow Fry the Tofu
β’ Heat 4β6 tablespoons of vegetable oil in a large pan over medium-high heat.
β’ Shallow fry the tofu on both sides until golden brown.
β’ Remove and set aside.
3. Cook the Vegetables
β’ In the same pan, add the chopped onions and sweet peppers.
β’ Sprinkle a pinch of salt.
β’ Fry over medium heat for about 3β5 minutes until slightly softened.
4. Add Garlic
β’ Add the minced garlic to the pan.
β’ Fry for another 2 minutes, stirring occasionally.
5. Make the Sauce
β’ Add 3 tablespoons of homemade Romesco sauce.
β’ Pour in 2 tablespoons of soy sauce.
β’ Add 1 teaspoon of Pul Biber (chilli flakes) and 1 tablespoon of concentrated vegetable stock.
β’ Mix everything thoroughly.
6. Simmer
β’ Lower the heat to low.
β’ Cover the pan and let the sauce simmer for 10β15 minutes to develop flavours.
7. Bring It Together
β’ Add the fried tofu back into the pan.
β’ Gently coat all the tofu pieces with the sauce.
β’ Turn the heat back up to medium-high.
β’ Cook covered for another 2 minutes.
8. Garnish and Serve
β’ Sprinkle with chopped parsley and sesame seeds.
β’ Serve hot with rice, noodles, or enjoy as-is!
