This is an easy recipe that is delicious for those vegans that miss eggs. It can be used in an egg salad sandwich, on toast in the morning for a healthy breakfast without the cholesterol and fat that eggs have. We love it. For people like me who have inherited a tendency for migraine headaches this won’t trigger a migraine like soy will.
The recipe is:
1 1/8 C. garbanzo flour, 2 t salt, 3 1/8 C water and about 1/2 t rosemary. It can be dressed up with chopped mushrooms, red bell peppers, onions, turmeric, garlic or other seasoning that you would normally use in a scrambled egg recipe.
