We have sooo many soy based products in Japan. It historically relates to the Shojin meal which the zen monks eat. We see such great creativities through these ingredients. Soy based products make dishes so filling, high in protein and of course tasty even though they don’t have any animal umami nor fat. Hope you can find them and try some!
