This is one of my favorite dishes… called Pollastre de Festa Major or Holiday’s Chicken: my dad usually cooks it for my hometown festivities (usually around August). I used the veggies that were screaming to be used like , … then for the chicken I used soy curls (super easy to order from Amazon). The only major swap I did was to use dates, instead of prunes… but hey… we do what we can here … it was surprisingly amazing . I didn’t follow a recipe and it’s really instinctively cooking (or grandma’s cooking, that’s how I like to call it). I used cognac and no chicken bouillon to bring even more flavor. And the last super important thing is the pine nuts… they really bring a nice flavor and texture… so please, don’t skip them! .
