This is one of my favorite dishesβ¦ called Pollastre de Festa Major or Holidayβs Chicken: my dad usually cooks it for my hometown festivities (usually around August). I used the veggies that were screaming to be used like , β¦ then for the chicken I used soy curls (super easy to order from Amazon). The only major swap I did was to use dates, instead of prunesβ¦ but heyβ¦ we do what we can here β¦ it was surprisingly amazing . I didnβt follow a recipe and itβs really instinctively cooking (or grandmaβs cooking, thatβs how I like to call it). I used cognac and no chicken bouillon to bring even more flavor. And the last super important thing is the pine nutsβ¦ they really bring a nice flavor and textureβ¦ so please, donβt skip them! .
