If you want to make some soy yogurt but don’t have any starter, you can use this simple trick – use soy bean soak water!
Soy Yogurt Without Starter
1 litre homemade soy milk (or use store bought, as long as itβs just beans and water) warmed to 37-40 degrees Celcius
2-3 Tbsp soy bean soak water
Youβll need: glass jar, muslin cloth and rubber band. Mix the milk and the bean soak water in a glass jar, cover with the cloth and rubber band. Ferment the milk at 40 degrees Celcius for 12 hours or at room temperature 18-24 hours.

1/2 cup dried organic soy beans
A pinch of salt
Make soy milk in Soyabella as per my recipe below or follow the steps below if you donβt have a soy milk maker:
Wash and soak soy beans for 12 hours. Keep 3 Tbsp of the soak water aside for yogurt making and drain the rest. Put soaked soy beans and 1 litre boiling water in a blender and blend for 2 minutes. Let the mixture cool down and then pour through a very fine sieve lined with a cheesecloth or squeeze the milk through the nut milk bag. Pour the liquid into a pot, add a pinch of salt and simmer on medium low for at least 15 minutes. Store your homemade soy milk in a jar in the fridge. Keep the pulp called okara in the fridge or freezer for other recipes. See my okara recipe playlist below.
