1. Vegan Pad Thai
Ingredients:
8 oz rice noodles
1 block firm tofu (cubed)
1/4 cup soy sauce
2 tbsp peanut butter
2 tbsp lime juice
1 tbsp sugar
2 cloves garlic (minced)
1 cup bean sprouts
1/4 cup crushed peanuts
Green onions and cilantro for garnish
Instructions:
Cook noodles according to package instructions.
SautΓ© tofu until golden brown.
Mix soy sauce, peanut butter, lime juice, sugar, and garlic to make the sauce.
Toss noodles and tofu with the sauce.
Stir in bean sprouts and garnish with peanuts, green onions, and cilantro.
2. Vegan Ramen
Ingredients:
8 oz ramen noodles (without seasoning packet)
4 cups vegetable broth
1 tbsp miso paste
1 tbsp soy sauce
1 cup mushrooms (sliced)
1/2 cup tofu (cubed)
1/2 cup baby spinach
1/4 cup green onions (chopped)
Sesame seeds for garnish
Instructions:
Cook ramen noodles and set aside.
Heat vegetable broth and stir in miso paste and soy sauce.
Add mushrooms and tofu, and cook for 5 minutes.
Add spinach, ramen, and green onions.
Serve hot with sesame seeds on top.
3. Peanut Noodles
Ingredients:
8 oz noodles (spaghetti or rice noodles)
1/4 cup peanut butter
2 tbsp soy sauce
1 tbsp maple syrup
1 tbsp lime juice
1 clove garlic (minced)
1/4 tsp red pepper flakes (optional)
1 cup shredded carrots
1/2 cup cucumber (sliced)
Chopped peanuts and cilantro for garnish
Instructions:
Cook noodles according to package instructions.
Mix peanut butter, soy sauce, maple syrup, lime juice, garlic, and red pepper flakes to make the sauce.
Toss noodles with the sauce, carrots, and cucumber.
Garnish with peanuts and cilantro.
4. Vegan Lo Mein
Ingredients:
8 oz lo mein noodles (or spaghetti)
1 tbsp soy sauce
1 tbsp hoisin sauce
1 tsp sesame oil
1/2 cup bell peppers (sliced)
1/2 cup broccoli florets
1/2 cup carrots (julienned)
2 cloves garlic (minced)
1/4 cup green onions
Instructions:
Cook noodles and set aside.
SautΓ© garlic and vegetables until tender.
Mix soy sauce, hoisin sauce, and sesame oil.
Toss noodles with the sauce and vegetables.
Top with green onions and serve.
5. Coconut Curry Noodles
Ingredients:
8 oz rice noodles
1 can coconut milk
2 tbsp red curry paste
1 tbsp soy sauce
1 cup broccoli
1 cup bell peppers (sliced)
1/2 cup tofu (cubed)
1/4 cup cilantro (chopped)
Instructions:
Cook noodles according to package instructions.
SautΓ© tofu until golden.
Add curry paste, coconut milk, soy sauce, broccoli, and bell peppers.
Simmer for 10 minutes.
Toss with noodles and garnish with cilantro.
6. Sesame Soba Noodles
Ingredients:
8 oz soba noodles
2 tbsp sesame oil
2 tbsp soy sauce
1 tbsp rice vinegar
1 tbsp maple syrup
1 clove garlic (minced)
1/2 cup shredded cabbage
1/2 cup carrots (julienned)
Sesame seeds and green onions for garnish
Instructions:
Cook soba noodles and set aside.
Whisk together sesame oil, soy sauce, rice vinegar, maple syrup, and garlic.
Toss noodles with the sauce, cabbage, and carrots.

7. Stir-Fried Udon Noodles
Ingredients:
8 oz udon noodles
1/2 cup snow peas
