VEGAN CHEESEBURGER PIZZA
1 premade pizza crust
1/4 cup textured vegetable protein mixed with 1/4 cup warm water (let sit for 5 minutes season with the seasonings listed below
garlic powder, onion powder, pepper
shredded lettuce
chopped tomatoes
sliced onion
chopped dill pickles
*homemade cheese sauce
**secret sauce
RECIPE FOR HOMEMADE CHEESE SAUCE
1 Yukon gold potato
1 carrot
1 to 1 1/2 cups cauliflower
1 tsp each salt, onion powder, garlic powder
1 T lemon juice
4 to 5 T nutritional yeast
1/4 cup soy milk or any unsweetened plant milk
1 to 1 1/2 cup cooking water
Chop potato, carrot and cauliflower
Add to a pot of water, bring to boil and simmer for 15 minutes or until fork tender.
Scoop out the veggies and add to a blender, retain the cooking water in case you need more water to thin sauce..
Add the rest of the ingredients and blend well pour into a glass jar and let cool and store in the fridge for 7 to 10 days.
RECIPE FOR SECRET SAUCE
2 Tablespoons of aquafaba mayo
1 Tablespoon ketchup
1 Tablespoon sweet pickle relish
Add everything to a bowl and mix well
TO ASSEMBLE THE PIZZA
Spread the secret sauce over the entire pizza crest
Next crumble the TVP over entire pizza the add the tomatoes and onions and drizzle cheese sauce over the top. bake in a preheated 450 degree oven for 5 to 7 minutes. As soon as it comes out of the oven sprinkle the shredded lettuce over the entire pizza and then the dill pickles.
RECIPE FOR AQUAFABA MAYO
1/4 CUP AQUAFABA
1 TABLESPOON LEMON JUICE
1 TABLESPOON VINEGAR
1 TABLESPOON WATER
3/4 TSP YELLOW MUSTARD
1/4 CUP SOAKED CASHEWS
1/8 TSP SALT.
ADD ALL THE INGREDIENTS INTO A BLENDER OR BULLET AND BLEND UNTILL SMOOTH. STORE IN A GLASS JAR AND KEEP IN THE FRIDGE. IT WILL LAST ABOUT A WEEK AND WILL THICKEN UP OVER NIGHT.
GLUTEN FREE TOFU TURKEY WRAP
1 Bfree quinoa and chia seed wrap
4 or 5 slices of the tofu turkey lunch meat
2 tablespoons of aquafaba mayo
2 tablespoons of avocado
shredded lettuce
chopped tomato
sliced onion
Combine the mayo and mashed avocado and mix well, season with garlic salt
and spread over entire wrap, next add the tofu turkey lunch meat to one side of the wrap then the rest of the ingredients. Roll up and enjoy
RECIPE FOR TOFU TURKEY LUNCH MEAT
1 block extra firm tofu (pressed for 10 minutes)
1.5 Tablespoon nutritional yeast
1tsp poultry seasoning
1 tsp Italian seasoning
2 Tablespoons lemon juice
1/2 tsp. salt
Preheat oven to 360 degrees
slice the tofu as thin as possible and then tear into smaller pieces and place in a baking dish.
Add spices and nutritional yeast and toss well. Add the lemon juice and toss again. Spread out the pieces the best you can
Bake for 30 to 35 minutes tossing every 10 minutes
