Here’s another asian noodle salad recipe :
Spicy Peanut Noodle Salad
Ingredients:
8 oz rice noodles (or soba noodles)
1 cup shredded carrots
1 cup cucumber, julienned
1 red bell pepper, thinly sliced
1 cup purple cabbage, shredded
1/4 cup fresh cilantro, chopped
1/4 cup crushed peanuts
Dressing:
1/4 cup creamy peanut butter
2 tbsp soy sauce or tamari
1 tbsp maple syrup
1 tbsp lime juice
1 tsp chili garlic sauce (adjust to taste)
1 tsp sesame oil
Water to thin, as needed
Instructions:
Cook the noodles according to package instructions. Drain and rinse under cold water.
Whisk together the dressing ingredients until smooth, adding water to reach your desired consistency.
Toss the noodles, veggies, and cilantro with the dressing.
Top with crushed peanuts and more cilantro. Serve chilled or at room temperature.
Sesame Ginger Noodle Salad
Ingredients:
8 oz soba or ramen noodles
1 cup snap peas, blanched
1/2 cup shredded carrots
1/2 cup cucumber, julienned
1/4 cup chopped scallions
1 tbsp sesame seeds, toasted
Dressing:
1 tbsp fresh ginger, grated
2 tbsp sesame oil
2 tbsp soy sauce
1 tbsp rice vinegar
1 tsp maple syrup
Instructions:
Cook the noodles and rinse with cold water.
Combine the dressing ingredients in a small bowl.
Toss the noodles, snap peas, carrots, cucumber, and scallions in the dressing.
Garnish with toasted sesame seeds and serve chilled.
Thai Mango Noodle Salad
Ingredients:
8 oz rice noodles
1 ripe mango, thinly sliced
1 cup shredded red cabbage
1/2 cup bell pepper, thinly sliced
1/4 cup fresh mint leaves, chopped
1/4 cup fresh cilantro, chopped
Dressing:
3 tbsp lime juice
2 tbsp tamari or soy sauce
1 tbsp maple syrup
1/2 tsp chili flakes
Instructions:
Cook the noodles and set aside to cool.
Whisk the dressing ingredients in a small bowl.
In a large bowl, combine noodles, mango, cabbage, bell pepper, mint, and cilantro. Pour the dressing over and toss.
Garnish with extra herbs and chopped peanuts. Serve chilled.
Soba Noodle Salad with Avocado and Edamame
Ingredients:
8 oz soba noodles
1 avocado, sliced
1 cup shelled edamame, cooked
1/2 cup cucumber, thinly sliced
1/4 cup radishes, thinly sliced
1 tbsp black sesame seeds
Dressing:
2 tbsp soy sauce or tamari
1 tbsp rice vinegar
1 tsp sesame oil
1 tsp sriracha (optional)
Instructions:
Cook the soba noodles, then rinse under cold water.
Mix the dressing ingredients in a bowl.
Toss the noodles with the avocado, edamame, cucumber, and radishes. Pour over the dressing and toss to combine.
Sprinkle with black sesame seeds and serve.
Vietnamese Vermicelli Noodle Salad
Ingredients:
8 oz vermicelli rice noodles
1 cup shredded lettuce
1 cup cucumber, julienned
1/2 cup shredded carrots
1/4 cup fresh mint, chopped
1/4 cup fresh basil, chopped
1/4 cup cilantro, chopped
Dressing:
3 tbsp lime juice
2 tbsp soy sauce or tamari
1 clove garlic, minced
1/4 tsp chili flakes
Instructions:
Prepare the vermicelli noodles according to package instructions. Rinse under cold water.
Whisk the dressing ingredients together.
In a large bowl, combine the noodles, lettuce, cucumber, carrots, and herbs. Toss with the dressing.
Top with roasted peanuts and crispy tofu if desired.
