These vegan chocolate muffins are everything you want in a treat—rich, fluffy, and bursting with chocolate flavor! Perfect for breakfast, a snack, or dessert! 🌱🤤
Ingredients:
Dry Ingredients:
1 ¾ cups all-purpose flour
¾ cup granulated sugar or coconut sugar
½ cup cocoa powder (unsweetened)
1 tsp baking powder
1 tsp baking soda
¼ tsp salt
Wet Ingredients:
1 cup plant-based milk (almond, oat, or soy)
½ cup melted coconut oil or vegetable oil
⅓ cup applesauce (or mashed banana)
1 tbsp apple cider vinegar or white vinegar
1 tsp vanilla extract
Mix-Ins:
½ cup dark chocolate chips or chunks (plus extra for topping)
Instructions:
1️⃣ Preheat oven to 180°C (350°F) and line a muffin tin with paper liners.
2️⃣ Mix dry ingredients: In a large bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt.
3️⃣ Combine wet ingredients: In another bowl, whisk together plant-based milk, oil, applesauce, vinegar, and vanilla extract.
4️⃣ Combine wet and dry: Pour the wet ingredients into the dry mixture and stir gently until just combined.
5️⃣ Fold in chocolate chips.
6️⃣ Spoon batter into the muffin liners, filling each about ¾ full. Top with extra chocolate chips.
