Creamy Garlic Spinach Orzo

Ingredients:
1 cup (200g) orzo pasta
2 cups (480ml) non-dairy milk (e.g., almond, oat, or soy)
2 cups (60g) fresh spinach, chopped
1 can (15oz/425g) chickpeas, drained and rinsed
3 garlic cloves, minced
1 tbsp olive oil or vegan butter
1 tsp garlic powder
Salt and pepper to taste
Optional: Nutritional yeast for a cheesy kick
Instructions:
Cook orzo in boiling salted water according to package instructions (about 8-10 minutes). Drain and set aside.
In a skillet, heat olive oil over medium heat. Add minced garlic and sautΓ© for 1-2 minutes until fragrant.
Stir in chickpeas, spinach, and garlic powder. Cook until spinach wilts (about 2 minutes).
Pour in non-dairy milk, stirring to combine. Simmer for 3-4 minutes until slightly thickened.
Add cooked orzo to the skillet, mixing well to coat in the creamy sauce. Season with salt, pepper, and optional nutritional yeast.
Serve warm and enjoy this cozy, plant-based bowl!
