I wanted to make a good feta cheese, but most of the recipes I found were quite high in salt or use tofu which didn’t have the consistency of feta I was going for. I experimented for a few weeks and by accident left one version in the refrigerator overnight until it “dried” out, which worked out perfect! After tweaking a few ingredients, I was happy with the result. This recipe used rice flour to get the dry crumbly consistency of feta and is completely gluten free! Also it’s soy free, as it doesn’t use any tofu! You can use it on pretty much anything and bakes really nice too on top of flatbread.Enjoy!
