Recipe Description:
Dal Vadi Kadhi is a comforting and protein-rich dish made with urad dal vadi, spiced curd-based gravy, and aromatic tempering. This vegan kadhi is packed with flavors and pairs perfectly with steamed rice or roti.
Ingredients:
Urad dal vadi (उड़द दाल बड़ी) – 1 cup
Oil (तेल) – for frying
Fenugreek seeds (मेथी दाना) – ½ tsp
Mustard seeds (सरसों) – ½ tsp
Cumin seeds (जीरा) – 1 tsp
Dry red chili (सुखी मिर्च) – 1
Green chili (हरी मिर्च) – 1, chopped
Asafoetida (हींग) – a pinch
Onion (प्याज) – 1, finely chopped
Ginger-garlic paste (अदरक-लहसुन पेस्ट) – 1 tbsp
Red chili powder (लाल मिर्च पाउडर) – 1 tsp
Turmeric powder (हल्दी पाउडर) – ½ tsp
Salt (नमक) – to taste
Gram flour (बेसन) – 2 tbsp
Soy curd (सोया दही) – 1 cup
Water (पानी) – as needed
Garam masala (गरम मसाला) – ½ tsp
Coriander leaves (धनिया पत्ती) – for garnish
Cooking Method:
1️⃣ Fry the Vadi: Heat oil and fry the urad dal vadi until golden. Remove and keep aside.
2️⃣ Prepare the Tempering: In the same oil, add methi seeds, mustard seeds, cumin, dry red chili, green chili, and a pinch of hing. Let them splutter.
3️⃣ Sauté the Aromatics: Add chopped onions and ginger-garlic paste. Sauté until golden brown.
4️⃣ Spice It Up: Mix in red chili powder, turmeric, and salt. Fry for a few seconds.
5️⃣ Prepare Kadhi Base: Whisk gram flour and soy curd with water into a smooth thin mixture. Pour into the pan while stirring continuously.
6️⃣ Simmer: Let the kadhi cook, stirring occasionally, until it thickens.
7️⃣ Add the Vadi: Drop in the fried vadi and simmer on low for 10 minutes.
8️⃣ Finish & Serve: Sprinkle garam masala and garnish with fresh coriander leaves. Serve hot with steamed rice or roti.
