Sticky marmalade tofu, done in 20 minutes π
Sometimes vegan food can seem overcomplicated, but I promise you these gorgeously glazed tofu fillets are perfect when you just need something mega simple for dinner π½οΈ
Ingredients (serves 2)
1 block tofu (280g)
1.5 tbsp cornflour
1 tsp paprika
1/2 tsp ground coriander
1/2 tsp mixed herbs
1/2 tsp onion powder
Pinch salt & pepper
Drizzle of olive oil
2 tbsp orange marmalade
1 tbsp wholegrain mustard
1 tbsp soy sauce
To serve
Basmati rice
Tenderstem broccoli/veg of choice
1. Preheat your oven or airfryer to 190c.
2. Slice a block of tofu into thick triangle wedges.
3. To a bowl, add your cornflour and seasonings and mix.
4. Place the tofu into that bowl and coat in the cornflour mix.
5. Add to a lined baking tray and drizzle with oil.
6. Cook in the oven/airfryer for 15-18/12-14 minutes.
7. Whilst the tofu cooks, mix together the marmalade, mustard and soy sauce.
8. Remove the tofu from the oven and slater the sauce over each piece. Bake for 4-7 more minutes until sticky and delicious.
