What I eat in a day no soy, gluten free, nut free vegan challenge! I hope this video gives you some easy meal ideas and meal prep inspiration! For breakfast on this day I made my Tropical Overnight Oats with Warm Pineapple sauce (recipe below) and for lunch I made a new version of my favorite vegan chicken salad recipe. Served it up in some red butter lettuce boats and had some dairy free sour cream and onion chips on the side. For dinner I made a hearty grain bowl with my favorite roasted veggie seasoning, and for dessert: 3 Ingredient Chocolate Nice Cream with DIY Magic Shell! So delicious!
