Recipe Ingredients & Instructions
For the Millet
1 cup raw millet
2 tablespoons olive oil
2 cups vegetable broth or water
For the Sauce
12 cup plant mayonnaise
1 tablespoon minced gherkins (pickles/relish)
1 tablespoon mustard
1 tsp paprika
1 tsp onion powder
1 teaspoon Maple syrup or agave
1 tsp Ketchup
1 tsp Apple cider vinegar
12 teaspoon celery salt
For the Millet Patties
2 tablespoons olive oil
1 onion, minced
1 1/2 cups thinly sliced white button mushrooms
2 1/2 cups cooked millet
1 cup cooked brown rice
1 cup bread crumbs
14 cup ketchup
1 tsp salt
1 tsp garlic powder
For the Millet
Thoroughly rinse the millet, then drain.
In a large pot, over medium heat, heat the oil.
Add the millet and cook for 3 to 4 minutes until slightly toasted. Add the vegetable broth. Bring to a boil, then lower the heat and cover.
Simmer for 20 minutes or until the liquid is fully absorbed.
Remove the pot from the heat and let the millet rest, covered, for 20 minutes.
For the Sauce
In a bowl, whisk all the ingredients together. Set aside.
For the Millet Patties
Preheat oven to 375F. (190°C)
In skillet over medium heat, heat the oil, than add the onions and mushrooms and cook for 3 to 4 minutes.
Transfer the onion and mushroom mixture to the bowl of a food processor. Add the remaining patty ingredients. Pulse for about 1 minute total, or until you reach a coarse texture. You will need a large food processor. I barely got all the ingredients to fit in mine.
Use an ice cream scoop (I used a 13 cup measuring cup) to divide the mixture into 6 portions, then flatten into patties. (I had enough mixture left to make 6 more patties)
Heat an oiled skillet over medium-high heat, then sear the patties for 2 minutes on each side.
Transfer the patties to a baking sheet.
Bake for 10 minutes.
To Serve
Slather the hamburger buns with the sauce, then add the millet patties and garnish with some lettuce, tomatoes, pickles and onions. Add a bun slice to make this a double decker.
