Healthy Matcha Ice Cream- Made with just 6-ingredients, no one will ever guess this delicious ice cream is dairy-free and good for you! (vegan, ninja creami recipe)
If I haven’t already convinced you that you need a Ninja Creami, LET THIS BE YOUR SIGN. Guys, you can make ice cream out of some sneaky stuff. Ice cream that everyone will devour without knowing they’re actually eating vegetables plus getting protein and healthy fats. I’m telling ya, it’s a game changer.
The best part is that, if you’re not into matcha, you can easily customize this recipe to flavor it however you like. But hopefully you like matcha as much as we do because it is pretty darn incredible as is.
Healthy Matcha Ice Cream Ingredients + Substitutions
- Cauliflower– I like to use riced cauliflower to help the blender break it down easier but regular frozen cauliflower will work the same.
- Dates– Be sure to use pitted dates for this recipe. You can sub a tablespoon or two of liquid sweetener, if you prefer. Just be sure to taste test it before freezing and adjust accordingly.
- Cashews or Walnuts- These are essential for a creamy texture. Cashews create the best texture but I like to use a mixture of both cashews and walnuts for healthy fats.
- Dairy-free Milk- I like unsweetened soy milk for extra protein. If you’re milk is sweetened, you may want to cut back on the amount of dates.
- Protein Powder- Helps thicken the ice cream while adding protein. I prefer to use a combination of unflavored and vanilla as I find vanilla on its own to be overpowering. If you want to omit the protein powder, I would substitute with a few more tablespoons of cashews.
- Matcha- Ceremonial grade matcha powder is ideal for the best flavor.
Can it be made nut-free?
While I wouldn’t suggest omitting the nuts from this recipe, you can add matcha to my vanilla protein ice cream for a nut-free version.
How to Make Healthy Matcha Ice Cream
- Place ingredients in a high speed blender. Taste test and adjust to your preferences.
- Transfer to Ninja Creami containers.
- Freeze for 8 hours.
- Blend on Lite Ice Cream setting. Add a splash of milk and blend again.
- Serve and enjoy!
Do you have to have a high speed blender?
I haven’t tested it using a regular blender but my suspicion is that it would work fine. It may be a little chunky going into the Ninja Creami containers, but the Creami should break everything down during the blending process.

- 1¼ cup dairy-free milk, I like soy milk for protein
- 1 cup frozen riced cauliflower
- ½ cup cashews or walnuts
- 2-3 medjool dates, pit removed
- 1 teaspoon matcha powder
- ½ scoop protein powder, I use a combo of unflavored and vanilla
- pinch of salt, optional

In a high speed blender, combine all of the ingredients and blend until smooth. Taste test and add more dates (can also use honey or pure maple syrup) if you prefer a sweeter taste. Add a pinch of salt, if desired. Blend again.

Pour contents of blender into Ninja Creami containers. It should fill 2 of them. Freeze for at least 8 hours, or overnight.

Blend in the Ninja Creami on the Lite Ice Cream setting. The first run will likely look a bit powdery. Add a splash of milk and blend again. At this point it should be smooth and have a scoopable texture. If not, use the respin button to blend once more. Serve immediately and enjoy!
