Honey-Lime Peach Salsa- Simple to make and bursting with summer flavor, this fruit salsa is the perfect side to serve at BBQ's and picnics!

How do we all feel about fruit salsa? I know it might sound a little weird to some but you can’t knock it until you try it!

Especially when ripe juicy peaches, crunchy sweet corn and fresh basil is involved. My goodness it’s one heck of a combination. It’s also ridiculously easy to make. We’re talking 20 minutes and it’s ready to go. Perfect to whip up for your next summer picnic or BBQ.

Peach Salsa Ingredients

  • Ripe Peaches- It’s vital that you use peaches that are just barely ripe. You don’t want overly firm peaches nor do you want sloppy, mushy peaches. Firm but not too firm is what we’re looking for here. The riper they are, the less likely it is that this salsa will hold up well the next day.
  • Tomato- Same story here. You want it ripe for the best flavor but not to the point that it looks like crushed tomatoes. We’re going for texture in this salsa.
  • Fresh Corn- You can cut the fresh corn right off of the cob for a nice crunchy texture or you can grill it to soften it a bit. Either way works beautifully.
  • Red Onion- Finely chopped red onion acts a nice savory pop of flavor that balances out the sweet in this recipe.
  • Jalapeño- Another savory addition, jalapeño adds depth making it taste more like a true salsa. I personally don’t find it to be spicy (especially when the seeds are removed) but you can forgo this ingredient if you’re concerned it will be too hot for your preferences.
  • Fresh Basil- Now technically you could get away with fresh cilantro or basil here but I really love the way fresh basil pairs with the peaches and the corn. Totally up to you though!
  • Lime Juice- Fresh squeezed lime juice is ideal but you can use the bottled stuff if you’re in a pinch. I promise I won’t tell anybody. 😉
  • Honey- Start with just a teaspoon and taste test to see if you prefer more. I find the sweeter the peaches are, the less you’ll need. Feel free to substitute agave nectar for a vegan version!
  • Extra Virgin Olive Oil- Just a little bit of healthy fat helps round out the flavor profile. Make sure to use a quality olive oil for best results.

How to Make Peach Salsa

  1. Chop your produce. This is really the most time consuming part but it’s not complicated so you can easily do it while listening to your favorite podcast or catching up on FaceTime with a friend.
  2. Make the dressing. Just add the lime juice, honey and olive oil to a measuring cup then whisk it all together. Boom.
  3. Stir it all together and serve!

Moral of this story: peach salsa = summertime. So grab a chip, a spoon, or smother it on top of something and enjoy!

Honey-Lime Peach Salsa

Simple to make and bursting with summer flavor, this fruit salsa is the perfect side to serve at BBQ’s and picnics!

Servings: 4 cups

  • 2 cups fresh peaches, diced into ½-inch pieces, about 2-3 medium/large peaches
  • 1 cup tomato, diced into ½-inch pieces, about 1 large tomato
  • 1 cup fresh corn kernels, raw or grilled
  • ½ cup red onion, finely chopped
  • ¼ cup jalapeño, seeded and finely chopped
  • ¼ cup fresh basil, thinly sliced
  • ¼ cup lime juice, about 2 limes
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon honey, or more to taste
  • pinch of fine sea salt
  • In a large bowl, combine the diced peaches, tomato, corn, onion, jalapeno and basil.

  • In a measuring cup, whisk together the lime juice, olive oil, honey and salt. Taste test to see if you prefer a sweeter flavor and add more honey, as desired.

  • Pour the honey-lime mixture over top of everything in the bowl. Stir to combine. Serve immediately or refrigerate for up to 2 hours before serving. Leftovers will usually hold up for 1-2 days depending on how ripe your peaches and tomato are, however the salsa is best when eaten the day of.
