I Turned Soy Curls Into Vegan Chicken Salad | And, It’s soooo GOOD!!!

In today’s video Jill shows a recipe for VEGAN chicken salad using Soy Curls. It’s a light and tasty salad that can be used for sandwiches, wraps, in bowls, tossed with green salads, or used as a light snack with crackers.

A Loose Ingredients List/Recipe for this Salad:
1 cup dry soy curls, rehydrated in very hot water. Rehydrate for about 5-10 minutes. Drain well and then squeeze the curls in your hands to remove excess water. Chill in fridge until ready to use.

After that — go for it!
On this occasion, I added:
๐Ÿ”น๏ธAbout1 teaspoon of my chicken-like seasoning mix
๐Ÿ”น๏ธ1/2 cup of diced celery
๐Ÿ”น๏ธ2-3 tablespoons of sweet pickle relish
๐Ÿ”น๏ธ2 teaspoons Dijon mustard
๐Ÿ”น๏ธ2 tablespoons of dehydrated onion flakes
๐Ÿ”น๏ธ2 tsp. dried parsley flakes
๐Ÿ”น๏ธ1/4 teaspoon black pepper
๐Ÿ”น๏ธ1/4 cup of my soy/cashew dressing
๐Ÿ”น๏ธ1/4 cup or more of vegan mayo (you know how much you like!)

Add all the ingredients to the soy curls. Mix well to thoroughly combine. Chill well before serving.
