Rainbow Crunch Noodle Bowl 🌈🍜✨
Looking for a quick, flavourful, and protein-packed meal? This Rainbow Crunch Noodle Bowl is loaded with crispy tofu, crunchy fresh veggies, and a yummy savoury sauce!
Ingredients ⭐️
🔹 For the Veggies:
• 1 cup red cabbage, thinly chopped
• 1/2 cup carrots, thinly chopped
• 1/2 cup cucumbers, thinly chopped
• 1 bell pepper, thinly chopped
🔹 For the Noodles:
• 3-4 packs ramen or vermicelli noodles
• 4 cups water
🔹 For the Tofu:
• 1 block firm tofu, pressed
• 1 tbsp olive oil
• 1 tsp garlic powder
🔹 For the Sauce:
• 1/2 cup soy sauce
• 1/4 cup maple syrup
• 1/4 cup olive oil
• 3 tbsp almond or peanut butter
• 2 tbsp sweet chili sauce or hot sauce
• 1 tbsp rice vinegar
• 1-2 garlic cloves
• 1 tsp ginger
• Juice from half a lemon
Directions
1️⃣ Crispy Tofu (2 Ways!):
• Air Fryer: Toss cubed tofu with olive oil and garlic powder. Air fry at 375°F (190°C) for 10-14 min, shaking halfway.
• Sauté: Heat 1 tbsp oil in a pan over medium heat. Add tofu cubes and cook for 8-10 min, flipping until crispy.
2️⃣ Noodles: Cook ramen or vermicelli noodles according to package instructions. Drain and set aside.
3️⃣ Veggies: Thinly slice all veggies and set aside.
4️⃣ Sauce: Blend all sauce ingredients until smooth.
5️⃣ Assemble: In a large bowl, mix noodles with the sauce, then add veggies and crispy tofu. Toss to combine.
✨ Garnish with sesame seeds & chili flakes. Serve & enjoy!
