Rainbow Crunch Noodle Bowl ๐๐โจ
Looking for a quick, flavourful, and protein-packed meal? This Rainbow Crunch Noodle Bowl is loaded with crispy tofu, crunchy fresh veggies, and a yummy savoury sauce!
Ingredients โญ๏ธ
๐น For the Veggies:
โข 1 cup red cabbage, thinly chopped
โข 1/2 cup carrots, thinly chopped
โข 1/2 cup cucumbers, thinly chopped
โข 1 bell pepper, thinly chopped
๐น For the Noodles:
โข 3-4 packs ramen or vermicelli noodles
โข 4 cups water
๐น For the Tofu:
โข 1 block firm tofu, pressed
โข 1 tbsp olive oil
โข 1 tsp garlic powder
๐น For the Sauce:
โข 1/2 cup soy sauce
โข 1/4 cup maple syrup
โข 1/4 cup olive oil
โข 3 tbsp almond or peanut butter
โข 2 tbsp sweet chili sauce or hot sauce
โข 1 tbsp rice vinegar
โข 1-2 garlic cloves
โข 1 tsp ginger
โข Juice from half a lemon
Directions
1๏ธโฃ Crispy Tofu (2 Ways!):
โข Air Fryer: Toss cubed tofu with olive oil and garlic powder. Air fry at 375ยฐF (190ยฐC) for 10-14 min, shaking halfway.
โข Sautรฉ: Heat 1 tbsp oil in a pan over medium heat. Add tofu cubes and cook for 8-10 min, flipping until crispy.
2๏ธโฃ Noodles: Cook ramen or vermicelli noodles according to package instructions. Drain and set aside.
3๏ธโฃ Veggies: Thinly slice all veggies and set aside.
4๏ธโฃ Sauce: Blend all sauce ingredients until smooth.
5๏ธโฃ Assemble: In a large bowl, mix noodles with the sauce, then add veggies and crispy tofu. Toss to combine.
โจ Garnish with sesame seeds & chili flakes. Serve & enjoy!
