Orange & Soy Tofu Salad w/ Sweet Chili Dressing
Ingredients/Cost:
10 oz tofu: $1.15
5 oz lettuce: $2.00
1 avocado: $1.50
1 orange: $0.50
1/4 red onion: $0.30
3 tbsp soy sauce: $0.20
2 tbsp @traderjoes sweet chili sauce: $0.15
2 tbsp plain Greek yogurt: $0.15
1/4 cup crushed pistachios: $0.90
1/4 tsp red pepper flakes: $0.05
Total cost = $6.90 or $3.45 per serving

1. Cut tofu into ~1 inch cubes and place on a paper towel. Place another layer of paper towel on top and then place a pan/sheet on top and weigh it down (I have used a heavy pot, book, etc to weigh it down). Essentially, you want to weigh it down enough to release some of the water but not so much that it crushes the tofu. Let it sit like this for ~10 minutes. While waiting, thinly sliced the onion, slice the avocado, and crush the pistachios. Combine the Greek yogurt and chili sauce to form the dressing.
2. After the tofu has released some water, place it in the air fryer @ 425F for ~10 minutes to form a crisp exterior. As the tofu cooks, juice the orange then place a small pan on the stove over medium heat. Add the orange juice, soy sauce, and red pepper flakes and cook for ~5-7 minutes so it thickens and forms a glaze.
3. Remove the tofu from the air fryer and place in a large bowl. Add the thickened sauce and toss to combine. Put tofu back in the air fryer for another 1-3 minutes so the sauce nicely coats the tofu (be cared not to leave it in too long, it will burn easily).
4. In a mixing bowl, combine the lettuce, onion, avocado, and dressing. Toss to combine. Place into serving bowls, then top with the glazed tofu and pistachio crumble.
