Calling all potato lovers!!! These Rosemary Garlic Smashed Potatoes are crispy, packed with flavor, and are a guaranteed crowd favorite. Smashed potatoes have been an internet sensation. The classic combination of rosemary and garlic give these potatoes the classic flavor combination, while the garlic leaf shoots adds some fancy in-depth garlic flavor.


You only need a total of 9 ingredients (including water) to make this recipe. The hardest part of making this recipe is waiting for the potatoes to cook and get crispy in the oven.
To make the most of your time while making this recipe, you can make the marinade while you are waiting for the potatoes to finish boil.
The garlic leaf shoots I used in this recipe is straight from my garden and is a great way to further infuse that lovely garlic flavor without that raw garlic taste.


Rosemary Garlic Smashed Potatoes
These Rosemary Garlic Smashed Potatoes are crispy, flavorful, and the perfect addition to any meal.
- 1 ½ pounds of Yukon Gold Potatoes
Marinade
- ⅛ cup of coconut oil
- 1 clove of grated Garlic
- Sprig of Rosemary
- Pinch of Curry Powder
- Pinch of Cayenne Pepper
- Nutritional Yeast
- Sea Salt
- 1 Garlic Leaf Shoot

Pre-heat your oven to 400 degrees F.

Boil potatoes in pot of salted water for 20 minutes. Drain and set aside to cool.

In a small bowl, prepare your marinade by combining all your ingredients and setting aside.

Place your boiled potatoes on a baking pan lined with parchment paper and smashed with a bottom of a small bowl or a glass cup. Brush each smashed potatoe generously with your marinade, flip and brush the other side.

Bake in oven for 15-18 minutes until the skin is crispy. Serve hot.
