RECIPE
Ingredients (serves 2):
• 150g shiitake mushrooms, sliced
• 2 tbsp miso paste
• ½ tbsp soy sauce
• ½ lime, juiced
• 1 tbsp maple syrup
• ½ tbsp sesame oil
• udon noodles
Toppings:
• spring onion, sliced
• coriander
• black sesame seeds
• crispy chilli oil (optional)
Method:
1️⃣ Heat a little oil in a pan, then fry the mushrooms until golden and tender.
2️⃣ In a bowl, whisk together the miso paste, soy sauce, lime juice, maple syrup, and sesame oil.
3️⃣ Cook the udon noodles according to packet instructions, then add them to the mushrooms, or if using straight to wok noodles add them directly to the pan.
4️⃣ Pour in the miso sauce and toss until everything’s coated and glossy.
5️⃣ Top with spring onion, coriander, and sesame seeds.
