Not only are red lentils high in protein and iron, theyโre also lower in fat and super budget-friendly if you buy in bulk.
Iโve never liked that tofu comes packaged in plastic, so this recipe has come in clutch as of late.
Red Lentil Tofu:
โข 1 cup red lentils
โข 4 cups water
โข 1/2 tbsp salt
1๏ธโฃ Soak lentils in bowl of water overnight.
2๏ธโฃ Drain and rinse lentils. Bring two cups of water to a boil and add to bowl along with rinsed red lentils. Allow to sit for 20 min. Add to blender and blend until smooth.
3๏ธโฃ Add to pot and bring to boil on stovetop. Reduce to medium low and whisk continuously.
4๏ธโฃ Add salt and two cups water and continue to whisk until creamy, thick consistency is achieved (about 8-10min).
5๏ธโฃ Remove from heat and pour into large baking dish. Allow to cool at room temp and then cover and place in refrigerator overnight.
6๏ธโฃ Cut into cubes and enjoy as is OR try seasoning with coconut aminos and baking in oven at 400F for about 15min, tossing halfway through.
