Stir-fried Bean Sprouts with Chives (豆芽炒韭菜)
A quick and tasty veggie stir-fry that’s full of flavor and ready in minutes.
Ingredients:
• 10 oz fresh Asian chives (cut into 1-inch pieces)
• 8 oz bean sprouts (rinsed and drained)
• 1–2 tablespoons cooking oil
• 2 garlic cloves (minced)
• 1 mini sweet red pepper (finely diced)
• 1 tablespoon soy sauce
• 1 teaspoon salt
• 1/4 teaspoon sugar
• 1/4 teaspoon black pepper
• 1 teaspoon rice vinegar (optional, for extra crunch)
Directions:
1. Rinse the bean sprouts and drain well. Wash and cut the chives into 1-inch pieces.
2. Heat oil in a pan over high heat. Add the garlic and red pepper, and stir-fry for 10 seconds until fragrant.
3. Add the bean sprouts and drizzle with vinegar. Stir-fry for 30 seconds.
4. Season with salt, black pepper, sugar, and soy sauce. Add the chives and stir-fry for about 1 minute until just wilted but still vibrant.
5. Serve hot with rice or wrapped in spring pancakes. Enjoy!
