Strawberry season is upon us and I have the perfect recipe for you to use up those juicy red beauties with! Not only is this strawberry pudding ridiculously easy to make but it requires minimal ingredients and will help you meet your protein goals.

Strawberry Protein Pudding Ingredients
- Extra Firm Tofuโ Please donโt hate me for using tofu in my recipes all of the time. Itโs just such a great way to sneak protein (+ calcium and iron!) into desserts while also keeping it dairy-free. You could use fava bean tofu to make it soy-free but I personally find the fava tofu flavor to be noticeable when using it in my non-chocolate desserts.
- Strawberriesโ Ripe, red, juicy. You know the drill. Just be sure to remove the hull first.
- Lemon Juiceโ Adds a subtle tartness that pairs perfectly with the honey and berries. Fresh squeezed is most ideal.
- Honeyโ I know honey isnโt vegan but itโs just so darn good paired with strawberries. Feel free to sub pure maple syrup or agave nectar instead.
- Vanilla Extractโ I always use non-alcoholic vanilla in my no-bake recipes so that I donโt taste the alcohol. If youโre using alcohol based vanilla, I suggest starting with less.
- Non-Dairy Milkโ Any kind of non-dairy milk will work. I like soy milk for more protein.
- Protein Powderโ You wonโt find this in the ingredient list but you can add it if youโd like to make the pudding higher in protein. Just start very small (like 1 tablespoon) as it can alter the flavor if you use too much. Itโs also a good way to thicken the pudding if you accidentally added too much liquid.
How to Make Strawberry Protein Pudding
- Add all ingredients except milk to a high speed blender. Use a tamper stick to help blend, until smooth. Add milk 1 tablespoon at a time, as needed, until a thick and creamy texture forms. Side note: if you want to have chunks of strawberries in the pudding, add a few after blending and pulse a few times to finely chop.
- Taste test to add more honey and/or a pinch of salt.
- Transfer to a sealed container and refrigerate for 6-8 hours.
- Serve with whipped cream and crushed graham crackers (optional) and enjoy!

Strawberry Protein Pudding

- 14 ounces extra firm tofu
- 8 ounces strawberries, hulled
- 3 tablespoons lemon juice, about 1 small lemon
- 2 tablespoons honey or pure maple syrup
- 1 teaspoon vanilla extract, preferably non-alcoholic
- 1 tablespoon unsweetened soy milk, plus more, as needed
- coconut whipped cream, for serving

In a high speed blender, layer strawberries with lemon juice, honey or maple syrup, vanilla and tofu. Using a tamper stick, blend until a smooth and creamy consistency forms. Add 1 tablespoon of milk at a time to help blend. Be careful not to add too much milk as it can make the texture runny. Taste test to see if you prefer more sweetener or a pinch of salt, and adjust accordingly.

Transfer to a sealed container and refrigerate for 6-8 hours, until set. Serve with coconut whipped cream, and enjoy!
To increase the protein content, you can add vanilla or unflavored protein powder. Start with 1 tablespoon and taste test to see if you can tolerate adding more.
