A creamy and vegan dessert made with matcha, roasted pistachios & almond cream cheese – naturally sweet and dairy-free. Perfect for matcha lovers 💚
Crust:
• 50g almonds
• 40g oats
• 25g coconut sugar
• 30g melted coconut oil
• 1 tsp maple syrup
→ Grind almonds & oats in a blender, mix with remaining ingredients, press into pan, bake 10 min at 180°C
Filling:
• 90g cashews (soaked for 30min)
• 20g pistachios (soaked for 30min)
• 150g almond cream cheese
• 60g soy yogurt or skyr
• 60ml maple syrup
• 25ml coconut oil
• 1 tsp vanilla
• 2 tsp matcha
→ Blend until smooth, pour over crust, chill at least 5h
Topping:
• 30g salted and chopped pistachios
