My mum wanted me to develop a recipe for a vegan zucchini slice. I personally wanted it to be soy free, not that I avoid soy altogether, it’s just there were already recipes out there for tofu versions of the dish. This slice can also be made with carrot, it turns out just as nice!
Zucchini Slice
Serves 4-6
10 minutes preparation, 45 minutes cooking time
Ingredients
β’ 1 litre water or vegan stock
β’ 1 cup polenta [fine]
β’ 1 tsp garlic powder
β’ 1-2 tsps. onion flakes
β’ ΒΌ tsp paprika
β’ ΒΌ tsp turmeric
β’ 2-3 tbsps. Nutritional yeast flakes
β’ 50 grams sun-dried tomatoes sliced
β’ 1/2 medium [1 cup] red onion finely diced
β’ 1 medium [2 cups] grated zucchini
β’ Optional: salt and pepper
β’ 1-2 tbsp. fresh herbs recommend thyme, basil, parsley or chives [or 1 tsp dried]
β’ 5-6 Cherry tomatoes sliced in half

I cook tasty healthy wholefood plant based recipes that are either low fat or contains very little to no oil.
