1 cup flour
1 tbsp baking powder
1 tablespoon sugar
1 tablespoon matcha powder (use high quality one!)
1 tbsp coconut oil
1 tsp vanilla extract
1 cup soy milk
1 tbsp lemon juice

1. Mix lemon juice with soy milk and let it sit for 5 minutes to curdle into buttermilk.
2. Whisk together all the ingredients, including the buttermilk, until the batter is smooth.
3. Heat a non-stick pan over medium heat and grease lightly with coconut oil, pour batter into the pan, cooking until each side is golden brown.
4. Top with your favorite toppings, and enjoy!
