What I Eat Vegan with Food Allergies to Soy, Wheat and Nuts #02

Welcome back to I PINK IT!

I am SOO EXCITED to share today’s video with all of you! It’s made with so much love and I hope it inspires you to cook healthier at home, specially right now that we are maintaining social distancing. If you have food allergies, I hope this video of what I eat in a day inspires you to try new foods and to embrace the restrictions.

I understand it’s frustrating to have so many food allergies, I personally have nine and a few sensitivities. I am allergic to soy, wheat, eggs, dairy, shellfish, peanuts, tree nuts, peas, and sesame seeds, yet I focus on eating plant based and nurturing my body with foods that do not make me react.

It’s all about learning what keeps your body healthy and sticking to it. This video is also specially made for all the avocado lovers, as my challenge is to eat avocado meals for 24 hours. If you are looking for inspiration on how to incorporate more avocados into your daily meals, this video will be perfect for you. I can’t wait for all of you to try these recipes and tag me on Instagram when you do.

TO NOTE: I’m currently eating 60g of protein a day, since my nutritionist recommended to reduce my intake of legumes for a temporal treatment I’m taking. I typically would add protein powder to my morning smoothie that would have taken me to my 60g daily consumption, but I was thinking it would make it purple so for the challenge of making avocado inspired meals I didn’t do it. That’s the only thing I’d have improved from my day 💚
