Ingredients
Guacamole:
2 ripe avoβs 1/4 cup red onion, finely chopped
1/4 cup fresh cilantro, finely chopped
1-2 limes, juiced
1 tbsp garlic pepper (coming soon)
Salt to taste
Tortilla Chips:
4 large flour tortillas
Optional: olive oil or cooking spray for tortillas
Cajun soy pieces:
250g soy chunks, rehydrated
2 tbsp neutral oil
2-3 tbsp cajun seasoning
1-2 tbsp browning
DIRECTIONS
1. Prepare the Guacamole: In a bowl, mash the avocado flesh to your desired consistency. Stir in the finely chopped red onion and fresh cilantro.
2. Add Lime Juice: Squeeze in the juice of two limes, mixing well. This adds a zesty flavour and helps keep the guacamole from browning.
3. Season: Add salt to taste, adjusting as necessary.
4. Make Tortilla Chips: Preheat your oven to 350Β°F (175Β°C). Cut the flour tortillas into chip-sized wedges or strips. If desired, lightly spray or brush them with olive oil for extra crispiness.
5. Bake Tortillas: Spread the tortilla pieces in a single layer on a baking sheet. Bake for about 10 minutes or until they are crispy and lightly golden.
6. Season Soy: Place rehydrated soy chucks into a bowl and add in a splash of avocado oil.Season generously with cajun seasoning. Mix till well combined.
7. Sear Soy: Get a large skillet going over medium-high heat. Spray with avocado oil and sear for 5-7 minutes mixing every minute until cooked to your liking.
8. Serve: Add the cajun pieces on top of the fresh guacamole and serve with your homemade crispy tortilla chips.
